Green Hill Cheese Recipes - Sweet Grass Dairy

When I first tried Sweet Grass's Green Hill cheese, I found it to be very reminiscent of a brie or camembert. It's mild, creamy, and has a melt-in-your-mouth quality that is extremely tasty. If you're looking for a little more pizazz rather than simply eating it with crackers here are two recipes that will really highlight its flavors.
BAKED GREEN HILL
INGREDIENTS:
1 whole Green Hill, chilled
1 granny smith, or other similarly tart apple
3 tablespoons brown sugar
2 tablespoon of your favorite bourbon
DIRECTIONS:
Preheat the oven to 350 degrees. Wash and core the apple. Cut ¼” thick slices and then cut in half.
Remove Green Hill from the refrigerator and remove plastic wrap.
Place Green Hill in a non-stick skillet or other shallow sided baking dish.
Sprinkle bourbon around the sides of the pan or dish so that it settles around the bottom.
Mound the green apple pieces over the top of the green hill and let them spill over the sides around the entire cheese.
Sprinkle the brown sugar over the top of the apple pieces.
Place into a preheated oven and bake for around 12-15 minutes or until warmed all the way through.
Serve family style with crusty bread.
GROWN UP GRILLED CHEESE WITH GREEN HILL & THOMASVILLE TOMME
INGREDIENTS:
8 thick cut slices of your favorite bread
we prefer whole wheat or rye bread
1 SGD Green Hill Cheese, sliced into ⅛” round slices
12 ounces SGD Thomasville Tomme, rind removed and sliced into ⅛” strips
If you do not have Thomasville Tomme, Gruyere or Provolone will also work.
About ½ cup softened butter, or mayonnaise
OPTIONAL: cooked bacon, sliced tomato, fresh spinach, dijon mustard
DIRECTIONS:
Preheat oven to 300°F
Lay sliced bread out in opposing halves and top with a layer of Green Hill and then a layer of Thomasville Tomme.
Fold halves on top of each other to form a sandwich. If you are adding additional toppings, go ahead and add these now. Slightly push down on your sandwiches to solidify your ingredients to keep them from spilling out into the pan.
Coat each exterior side of the sandwich bread with a generous slather of either butter or mayonnaise. We prefer using mayonnaise to give it a great texture.
Heat a skillet over medium heat, and put two sandwiches down in the pan and let them sear until you get a beautiful golden crust--- start with lower heat if you are concerned about burning the bread-- and then flip to the other side and repeat.
Once you have a beautiful crust on both sides of your sandwich, transfer them to a baking sheet, and repeat with your remaining sandwiches.
Once you have all your sandwiches seared, you can put them in the oven for 10-15 minutes to heat all the way through.
Cut into one to check that your cheese is melted, if so, serve immediately. If not, put your sandwiches back in the oven for a few more minutes.
